Everything you need to know about Taiwanese brown sugar, and why it's so special.

Taiwanese brown sugar (also known as 'black sugar') is sugar made from the sugarcane plant, and has a naturally higher molasses content compared to granulated white sugar and regular brown sugar.
Taiwanese brown sugar is made of pure concentrated sugarcane juice without any removal of molasses. Regular brown sugar is typically made by adding the sugarcane molasses back to completely refined white granulated sugar. White granulated sugar is refined from the crystalized raw sugar, containing 99.9% sucrose. Taiwanese brown sugar contains up to 50% sucrose, and includes molasses.
Similar to unrefined muscovado sugar, Taiwanese brown sugar has a sandy texture with a rich, complex flavor and retains the natural trace nutrients inherent from sugarcane juice.
The Taiwanese brown sugar is produced simply by slowly cooking down pure sugarcane juice. That syrup is then cooled, leaving dark brown-black blocks of sugar.
Taiwanese brown sugar is made from naturally darker sugarcane grown in the south west regions of Taiwan, and has a unique nutritional profile based on its environment and production process. The year-round warm, rainy, and tropical weather in Taiwan has an ideal environment to produce high quality sugarcane.
Due to the completely unrefined nature of Taiwanese brown sugar, the sugar naturally contains minerals such as iron, calcium, magnesium, potassium, phosphorus, and vitamin B6 that are filtered out of white sugar.

Taiwanese brown sugar is one of the purest, unrefined cane sugars in the world, and has even been used in traditional Chinese medicine since the 1600's due to its naturally occurring iron and potassium contents.
In Taichung, Taiwan, black sugar was first used to make the now popular 'Tiger Sugar' bubble tea in late 2017. Tiger Sugar first opened in Taichung, Taiwan, selling its signature brown sugar pearl milk drink created to evoke the nostalgic flavours of traditional Taiwanese desserts. The indulgent drink and its iconic tiger stripes of caramel streaking the insides of its cup started a global craze for brown sugar bubble tea.
Infusing regular tapioca pearls with dark brown sugar syrup caramelized pearls helps give brown sugar milk tea its unique sweet and smoky flavour.
Tapioca is typically made using tapioca starch, water, and sugar. To achieve the iconic black color you find in bubble tea tapioca balls, Taiwanese brown sugar is needed.
